1 small onion, chopped
3 Tbsp cooking oil
1 c long grain rice
3 to 4 Tbsp tomato sauce
Few shakes of cumin
2 c chicken broth
1 c water or use all broth if you want



Directions:
Directions:
Salt and pepper to taste (I don't add any more salt if using chicken broth) Sauté the rice in the hot oil till golden, this will enhance the flavor. Then add onion and cook for a few more minutes be careful, as onion will burn if not attended to. And broth and water, tomato sauce, cumin, pepper and salt if you want stir until everything is mixed. Cover, reduce heat to low and simmer until all the liquid is absorbed and rice if flaky.
