4 to 5 pound corned beef brisket or rump
1 onion
1 bay leaf
2 cloves garlic
1 leek (optional)
2 carrots
a few whole back peppers.

Directions:
Directions:
Wash beef and put in kettle. Cover with water and add remaining ingredients. Bring to boil, cover and simmer 4 to 4 1/2 hours, or until tender. If not serving hot, let stand in the broth until lukewarm (this keeps the beef moist). Then remove and chill.
