1 1/2 c. large pecan halves
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla

Palce pecans in a 15x10 inch jelly roll pan and heat in 375º oven for 5 minutes, stirring once. Turn off oven, leaving pecans inside oven. Combine next 4 ingredients in a heavy buttered 2-quart saucepan. Cook over medium heat, stirring constantly, until mixture boils. Insert a candy thermometer and cook until mixture reaches 236º (solf ball stage). Remove from heat and beat with a wooden spoon for 1 minute, or until mixture is creamy. Add vanilla and warm pecans stirring until all pecans are coated. Pour on to a buttered baking sheet. Using two forks, seperate immediately into small clusters. Cool and store in air tight containers.
