Ingredients: * 3 cans low sodium beef broth * 1 can Healthy Choice cream of mushroom soup * 2 large leeks/medium slice * 2 red onions/medium slice * 2 sweet onions/medium slice * 4 shallots/medium slice * 2 heads garlic/medium chop *Portabello mushrooms,buttom mushrooms,shittake mushrooms...any FRESH mushrooms you can find & like/washed & medium chop/enough to equal about 3 to 4 cups *salt/pepper/dill/parsley to taste

Directions:*Get out your favorite soup pot & cover the bottom nicely with olive oil .* Let it heat up over medium heat,then add the garlic & cook about 2 minutes .*Add all the onions,reduce the heat & slow cook {at least 20 minutes} until soft & a caramel color.{You need to keep a close eye during this cooking time & stir occasionally to often/as needed.} *Once the onions are ready,add the broth & mushroom soup.*Stir gently & combine well. *Taste it after about 15 minutes {still on low heat} Season & add the mushrooms.*Stir well & cook with a vented lid about another 15 minutes until the mushrooms are to the texture you like , stirring occasionally. *Garnish with sour cream or big chunky croutons...or both ! |
