3 large egg yolks
1½ Tbsp fresh lemon juice
4 Tbsp unsalted butter (chilled)
¾ C unsalted butter (melted)
salt to taste
ground white pepper to taste

Directions:
Directions:
Place egg yolks in a small saucepan; whisk until become lemon yellow and slightly thick (1 minute)
Whisk in lemon juice until combined

Add 2 Tbsp cold butter to egg mixture over very low heat (I use latent heat) whisking constantly as butter melts
Continue whisking until thick enough to see bottom of pan between strokes

Remove from heat; whisk in remaining cold butter 1 Tbsp at a time until all incorporated

Whisk in melted butter slowly; Keep whisking vigorously to create a thick, smooth sauce (If sauce gets too thick, whisk in 1 teaspoon warm water at a time until you reach desired consistency)

Season with salt and white pepper to taste; Serve immediately
