3 large eggs
2 tsp. sour cream
1 tsp. water
salt
pepper
oil or butter for cooking

Directions:

Crack eggs into a bowl and whisk thoroughly with sour cream, water, salt, and pepper

Place oil or butter in skillet and heat to medium high

Pour eggs into hot skillet and constantly scrape through egg mixture until the uncooked eggs no longer cover the pan behind the scrapes, then lower heat to low and continue gently folding the eggs until cooked through.
