3 tablespoon extra-virgin olive oil
½ onion, diced
2 cup rice, rinsed
1 can diced tomatoes
2 garlic cloves, minced
1 jalapeño pepper, stemmed, seeded, and chopped
1 teaspoon sea salt
1 tsp cumin
1 ½ teaspoon oregano
2 cups stock of your choice

Directions:

Heat the olive oil in a deep frying pan or dutch oven. Add the onion and jalapeno and cook for 5 to 8 minutes, or until softened. Add the rice and the garlic and cook for 2 minutes, or until fragrant and toasted.

Stir in the can of tomatoes, stock, and spices. Bring to a boil. Cover, reduce the heat, and simmer for 15 minutes, or until the liquid is absorbed.

Remove from the heat and let sit, covered, for 10 more minutes. Fluff with a fork.
