"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 C chopped pecans
1/3 C melted butter
1/2 C firmly packed brown sugar
2 sections of rolled out pie crust (I use refrigerated)
1 tsp flour
6 medium apples
1/4 C sugar
2 TBS flour
1/2 tsp cinnamon
1/8 tsp nutmeg

Directions:
Directions:
Preheat the oven to 375º.
Combine pecans, brown sugar and melted butter.
Mix well, spread evenly at the bottom of pie plate.
Place first pie crust into pan over the pecan mixture.
Lightly press down around sides and sprinkle with 1 tsp flour.
In a large bowl, combine with apples sliced somewhat thinly, sugar, flour, cinnamon and nutmeg. Mix together and spoon into crust.
Top with second crust, and use fork to "flute" the edges of the 2 crusts together.
Cut 4-5 slits in the top of the crust, forming a rough star like shape in the center. This does not need to be pretty. Nobody will see this. It is purely for venting purposes.
Place the pie plate on a baking sheet, and bake for 40-50 minutes, until golden brown.
Remove pie carefully from the oven. Allow to cool for about 5 minutes.
Place a serving plate over the top of the pie. (This is the trickier part. You want to do this fast and securely.)
Quickly and CAREFULLY flip over so that the pie is now upside down.
Carefully remove the pie plate.
There may be some of the pecan mixture still on top. Do not worry if there is.
You can carefully put it back, or even make more in a sauce pan to put on the pie.
Cool 1 hour before serving.
