4 slices bacon, cut up

1/4 cup finely chopped onion
(/4 cup finely chopped green pepper
I don't use the green pepper)

3 cups boil rice
2 cups cooked tomatoes (I use tomato sauce)
1 1/2 tsp salt
1/8 tsp. pepper

1/4 cup grated cheese

Spanish Rice
Fry until crisp
4 slices bacon, cut up
Remove bacon to 1 1/2 qt baking dish, whisk around
to grease the dish.
add to bacon fat
1/4 cup finely chopped onion
(/4 cup finely chopped green pepper
I don't use the green pepper)
Saute until onion is yellow. Combine in baking dish with
3 cups boil rice
2 cups cooked tomatoes (I use tomato sauce)
1 1/2 tsp salt
1/8 tsp. pepper
Sprinkle over top
1/4 cup grated cheese
Bake uncovered
Temperature 400 degrees
Time Bake 25 to 30 minutes.
Amount 4 to 6 servings.
