2 cups all purpose flour
1 tsp baking soda
¼ tsp salt
½ tsp cinnamon
1 egg
1 1/8 cup sugar
½ cup vegetable oil
2 tbsp buttermilk
1 tsp vanilla
3 extra ripe bananas
½ cup chopped walnuts

Directions:
Directions:
Preheat oven to 325 degrees, spray 2 8X5 loaf pans with nonstick spray. Mix flour, baking soda, salt, and cinnamon with whisk until combined in one bowl. In second bowl, mix egg, sugar, and oil with whisk until combined. Add the dry ingredients to the wet and mix well, mixture will be thick and dry. Add in the buttermilk, vanilla, and mashed bananas until combined. Stir walnuts into mixture or sprinkle over the top. Bake for 60-75 minutes until toothpick comes out clean.
