5 c. sliced peeled peaches*
1/2 c. sugar
2 T.flour
1 T. lemon juice
1/2 tsp.vanilla extract
1/4 tsp. almond extract
1/2 tsp. cinnamon
1/4 cup water
2 T.margarine

Batter ingredients:
1/2 c. unsifted all-purpose flour
1/2 c. sugar
1/2 tsp. baking powder
2 T. margarine, softened
1 egg, beaten

1. Make filling: In medium bowl, combine peaches, 1/2 c. sugar, 2 T. flour, lemon juice, vanilla and almond extracts, cinnamon, and 1/4 c. water. Turn into 8x8x2 baking dish. Dot with 2 T. margarine.
2. Preheat oven to 375º
3. Make batter: In medium bowl, combine sugar, margarine, egg, baking powder and 1/2 c flour. Beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. (Batter will spread during baking)
4. Bake 35-40 minutes, or until peaches are tender and crust is golden brown. Serve warm with light cream or vanilla ice cream.

*or use 2 cans (1 lb, 14-oz size) sliced peaches, drained, reserving 1/2 c. syrup to use instead of the water in Step l.
