¼ C cornmeal
¼ C flour
1 tsp thyme
1 tsp salt
½ tsp pepper
½ tsp cayenne pepper
½ tsp paprika
4 (4-oz) rainbow trout fillets
4 T butter, divided
2 T Amaretto liqueur
2 T whiskey
¼ C pecans, chopped

Directions:
Directions:
In plastic bag, combine first 7 ingredients (cornmeal, flour, thyme, salt, pepper, cayenne, paprika), shaking to mix well. Put trout fillets in bag and shake to coat evenly, one at a time. In large skillet over medium-high heat, melt 2 tablespoons butter. Add trout, flesh side down, and cook until golden, about 2 minutes. Gently turn and cook 2 additional minutes. Remove fillets to serving platter. Add remaining 2T butter, Amaretto, whiskey and pecans to skillet. Cook until bubbly, about 1 minute. Pour over trout and serve.
