White Perch (best fish to use)
flour
salt/pepper
vegetable shortening
4 T butter
2 C sweet milk
⅓ C vinegar

Directions:
Directions:
Roll fish in flour, salt and pepper. Brown as quickly in vegetable shortening. Remove fish to roaster and pour off all grease from frying pan. Put 4 tablespoons of butter in pan and 2 cups sweet milk. As soon as mixture is hot, remove from stove and gradually pour vinegar, beating constantly, with rotary beater. Pour over fish and baste often until fish is done. Place fish on platter and pour over it all surplus sauce.
