Preheat oven to 350º.

Mix the following ingredients together:
1 can of whole kernel corn
1 can creamed/cream-style corn
1 8 oz cream cheese
1 box of Jiffy corn muffin mix
1 stick of butter

Directions:

Grease a small casserole dish and add mixed ingredients. Bake 45 minutes (probably closer to an hour, just keep an eye on it!) until the insides are cooked and a knife comes out clean. Typically the top should be brown.

Amelia loves a good corn casserole with Thanksgiving dinner and we have been searching for a favorite recipe for years. Amelia tried this one at a Friendsgiving with her UVA Law School friends and so we made it in 2023. I think we have a winner!
