2 1/2 cups milk
1 cup grated cheese
2 tbsp flour
2 tbsp butter
1 can mushroom soup
salt & pepper
sliced onion
approx. 6 potatoes

Directions:
Directions:
Preheat oven to 350.

Wash, peel and slice potatoes into medallions and slice onions as well. Par boil potatoes and onion together for 8-10 minutes. Drain and put in a casserole dish.


Melt butter on low and add the flour (this is called a roux) mixture and salt and pepper. Then add the milk slowly and keep stirring until thickened. Add your cup of cheese and mushroom soup. Add to potatoes and onion and mix well.

Put in oven for 45 minutes. Remove lid for the last 15 minutes to brown the top. Pierce with fork to see if potatoes are soft.

When Ryan and Beth were small, a lot of Sunday dinners were ham and scalloped potatoes. Ryan didn't like scalloped potatoes and Beth didn't like ham, so Ryan enjoyed all of the ham and Beth enjoyed the potatoes.
