1 c. uncooked rice
1 medium onion, chopped
1 medium bell pepper, chopped
1 c. celery, chopped
1/2 c. butter, melted
1 Tbsp. sugar
1 or 2 jalapeno peppers, chopped
2 cans cream-style corn
1 c. shredded cheddar cheese

Directions:
Directions:
Cook rice according to directions. Set aside. Saute onion, pepper and celery in butter until tender. Combine rice, vegetables and remaining ingredients, stirring well. Pour mixture into lightly greased 12x8x2 in. baking dish. Bake at 350º for 40-45 minutes. Sprinkle with paprika for color, if desired.
