3 cups mashed potatoes
1 cup shredded cheese (cheddar, mozzarella, or your favorite melting cheese)
1/4 cup all-purpose flour
2 tablespoons Parmesan cheese
2 tablespoons chives
1/3 cup sour cream
salt to taste
2 eggs beaten

Directions:
Directions:
1) Preheat your oven to 400ºF and grease a muffin tin.
2) In a mixing bowl, beat the eggs and mix in the sour cream until well combined.
3) Add the shredded cheddar cheese, Parmesan cheese, chopped chives, and a pinch of salt to the egg mixture. Mix thoroughly.
4) Gently fold in the mashed potatoes, ensuring the mixture is evenly combined.
5) Spoon the mixture into the greased (olive oil works great) muffin tin, filling each cup to the top.
6) Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and puffed up.

NOTE: Allow the potato puffs too cool slightly before carefully removing them from the muffin tin. Serve the leftover mashed potato puffs as a delicious side dish or snack.

Our family has enjoyed having them as part of the breakfast meal the next day. Delicious as just a snack - store in a ziplock bag in the refrigerator.
