2½ (12½ ozs) Italian-style "00" flour, plus more for dusting
1 tsp. fine sea salt
4 large eggs
1 T extra-virgin olive oil
Semolina flour, for dusting pasta and surfaces

Directions:

In food processor:

Combine flour and salt in bowl--pulse a few times

Crack eggs and pour oil on top of flour

Process until dough forms a ball

Remove from bowl and turn dough onto a lightly floured surface. Knead well and cover, allowing dough to rest for about 1/2 hr.
