Meatloaf:
2 lb. ground beef
1/4 c. breadcrumbs (1 slice of bread made into breadcrumbs)
1/2 c. onion, finely chopped
1/4 c. whole milk
1/2 c. barbecue sauce
2 eggs
2 Tbsp. Worcestershire sauce
1 Tbsp. minced garlic
1 tsp. fine sea salt
1/4 tsp. ground black pepper

Topping:
1/2 c. ketchup
1/4 c. light brown sugar
2 Tbsp. Worcestershire sauce

Preheat oven to 375º.

Topping:
Combine ketchup, brown sugar, and Worcestershire sauce in a small bowl, set aside.

Meatloaf:
In a large bowl whisk together milk, BBQ sauce, eggs, Worcestershire sauce, garlic, salt and pepper. Add meat, onions and breadcrumbs and sir until combined. Line a wire rack with aluminum foil and poke holes in it, the pace it on a large baking sheet. Form the mixture into a large loaf (about 10" by 5" by 2"). Bake for 40 minutes. Remove from oven, spread sauce on top and bake for 10 more minutes or until meatloaf reaches an internal temperature of 160º F.

To make your own breadcrumbs: Tear apart 1 slice of bread. Place it on a baking sheet in a preheated oven for 3-5 minutes until toasted. Place in a blender or food processor and pulse until fine crumbs form.

Ingredient Substitutions:
*Breadcrumbs: You can substitute quick-cooking oats for the breadcrumbs, but it will slightly affect the texture.
*Milk: the recipe calls for whole milk, but any variety works well. The higher fat content the better. Half and half and heavy cream can be used too.
*Worcestershire sauce: If you don't have any Worcestershire sauce on hand, simply increase the barbecue sauce by 2 Tbsp.
*Minced garlic: freshly roasted and crushed garlic can be used in place of store-bought minced garlic. You can also substitute 1 tsp. garlic powder for 1 Tbsp. minced garlic.
