Ingredients: For the baked tofu I package extra firm tofu ~ 400-500 grams 2 tsp olive oil 2 tbsp corn starch (name maybe cornflour in Europe) sprinkle of salt ~ 1/2 tsp
For the sauce juice of 1/2 to 1 lemon lemon zest from one lemon 2 tsp olive oil 2 tbsp soy sauce 2 tsp honey or brown sugar 2 tsp garlic 1 tsp ground ginger 2 tsp corn starch 1/8 - 1/4 cup boiling water

Directions:Baked Tofu Preheat oven to 200 º celsius Cut tofu into small cubes about 2.5-3 cm x 2.5-3 cm, (it's not exact that is a reference point) and place in a mixing bowl add olive oil, corn starch and salt mix to coat cook in preheated oven for 20 min
While tofu is cooking make sauce: In a small bowl add all the above ingredients for sauce EXCEPT cornstarch. Whisk all ingredients together. Preheat a fry pan that can hold the sauce and tofu. Once all ingredients are whisked add corn starch and boiling water whisk again. Put sauce in fry pan, sauté pan and the sauce will thicken quickly. Add the tofu to coat and let sit for 2-3 mins. Turn off stove and you have your protein. |

Notes: The baked tofu recipe is one I use regularly. You can make any type of sauce you want for it. Sometimes I use vegan pesto or a teriyaki sauce or chimichuri sauce.
Here is another sauce you can use Peanut Satay 2 tbsp peanut butter 2 tsp soy sauce juice of one lime 2 tsp brown sugar shake of Sirachi 1/4 cup canned coconut milk Red curry paste (optional 1 tsp)
Stir all ingredients and heat is sauté pan, once hot, add tofu cook for 2-3 minutes. Ready to serve and eat.
