3 Eggs at room temperature
2c Granulated Sugar
2c Grated Zucchini (Include Peel)
2c Sifted All Purpose Flour
2tsp. Baking Soda
1tsp. Salt
2tsp. Cinnamon
¼tsp. Vanilla Extract

Directions:
Directions:
Preheat oven to 350ºF
Beat eggs until foamy. Add sugar and mix well. Fold in grated zucchini.
Mix dry ingredients and slowly add to wet mixture until well combined. Pour batter into two greased and floured loaf pans. Bake for 1hr. or until a toothpick inserted in the middle comes out clean. Cool for 10 minutes, and remove from pan.
