1/2 stick salted butter
4 large eggs
2/3 c. whole milk
2/3 c. all-purpose flour
2 tsp. vanilla
1/2 tsp. salt

Preheat oven to 450º and set 10" or 12" cast iron skillet on rack with 2 Tbsp. butter. (Do not leave in oven for over 10 minutes.) In small saucepan melt remaining 2 Tbsp. butter. Set aside to cool. In blender/food processor, combine eggs, milk, flour, vanilla, salt and cooled butter. Place in hot skillet from oven and bake for 20-25 minutes. (Do not open oven.) Remove pancake from oven and top with your favorite topping.
