Ingredients: Meatballs
1lb ground beef or turkey 2 T parsley 1 T italian seasoning 1 clove minced garlic 1 t salt 1 t pepper ½ c panko 1 egg
Soup base 1 whole chicken water- enough to cover chicken 1 bay leaf
Soup 3 T butter or olive oil 1 head celery, chopped 1 onion, chopped 3 carrots, sliced in rounds 2 c fresh spinach 5 c chicken bone broth or stock salt and pepper to taste 2 c pepe noodles 4 eggs ½ c parmesan cheese

Preheat oven 350º In medium bowl combine: ground meat, parsley, italian seasoning, minced garlic, egg and panko
Add more panko if not desired consistency.
Shape into small (¼ inch) meatballs and place on greased cookie sheet.
Cook 15 minutes and turn over halfway.
Soup Base
Place washed whole chicken in large pot and cover with water. Add bay leaf and cover. Boil chicken about 25-30 minutes until full cooked.
Remove chicken; reserve water; discard bay leaf.
Once cooled, shred the chicken; discard the bones.
Soup
Lightly saute all chopped veggies in either the butter or olive oil. Add reserved broth and chicken bone broth or stock. (total between 6-8 cups). Add shredded chicken and meatballs. Once combined add fresh spinach
In separate bowl add eggs and parmesan cheese and mix with a fork. Once the soup is at a near boil temperature, stir in the egg/cheese mixture and continue to stir/whisk until thoroughly combined (you don't want chunks of cooked egg).
Add the pepe noodles and continue to stir for about 1 minute until blended.
Lower temperture to low/medium and leave uncovered. Cook for another 15 minutes allowing all ingredients to combine and create flavor together.
Serve with a side salad, a loaf of Dad's boule bread, or any other side that you crave. |

Notes: We have all enjoyed Cheryl's Italian Wedding Soup too many times to count. This is probably her signature dish. We have stood side by side in both her kitchen and mine making this together. Whenever anything was wrong you could count on her bringing a tupperware container full of it. You know, chicken soup of the soul. When in doubt? Have a bowl of soup and maybe things will look a little better. Winter, Spring, Summer or Fall you can go to her house and count on there being some in her freezer, waiting to bring out and share.
I hope you give this recipe a try. Prep can seem daunting but really it is super easy. When in a pinch I have used a Costco roasted chicken to bypass cooking one.
