Chicken Marinade
1 1/2 pounds boneless skinless chicken breast cut into cubes
1 tablespoons butter
1/4 cup soy sauce
2 tablespoons minced garlic
1 teaspoons minced ginger (squeeze bottle ginger)
1-2 tablespoons ginger
3 tablespoons brown sugar
Yum Yum sauce for serving


Fried Rice
1/2 cup cubed onions
1 bag of frozen peas and carrots (unthaw and drain liquid)
2 large eggs whisked
4 cups cooked white rice (cool and make a day prior)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon soy sauce
1 tablespoon toasted sesame oil

Chopped green oinons for garnish

Directions:
Directions:
Marinade Chicken in a gallon bag. Mixing everything except for butter.

Heat blackstone griddle.
Add butter and saute onions and minced garlic for a minute.
Add peas & carrots and saute a minute.
Push the veggies to the side.
Add eggs and scramble them & mix with veggies.
Add rice, salt, pepper, soy sauce & sesame oil and toss well.
Heat evenly on the grill, add salt, pepper and extra soy sauce if needed.

Move rice to side of the grill.
Start cooking chicken in the 2 tablespoons of butter. Saute chicken until completly cooked.
Serve with Yum Yum sauce
