Hawaiian Chicken Kabobs Recipe

⅓ C ketchup
⅓ C packed dark brown sugar
⅓ C low-sodium soy sauce
¼ C pineapple juice
4 tbls olive oil, divided, plus more for brushing the grill
1½ tbls rice vinegar
4 garlic cloves, minced (4 tsp)
1 tbls ginger, minced
½ tsp sesame oil
salt as desired
¾ tsp pepper

CHICKEN AND VEGETABLES
1¾ lbs boneless, skinless chicken breast, chopped into 1¼ inch cubes
3 C cubed pineapple
1½ large green peppers, diced into 1¼ inch pieces
1large red onion, diced into 1¼ inch pieces.

In a mixing bowl, whisk together ingreºdients for marinade, only 2 tablespoons of the olive oil.

Reserve ½ cup of marinade in refrigerator, then pour the remaining marinade over chicken in gallon size bag. Leave in marinade for 1-2 hours (but can leave for up to 12 hours). Soak 10 wooden skewer sticks in water for 1 hour.

Pre-heat grill to 400º.

Drizzle 2 tbls olive oil over the cut vegetables and toss. season with salt and pepper.

Thread onion, pepper, pineapple and chicken on skewers until all the chicken has been used.

Brush grill grates with olive oil, then place skewers on the grill. Grill for 5 minutes, then brush along tops with ¼ C marinade. Rotate to opposite side and brush remaining ¼ C marinade, grilling for another 4 minutes, or until chicken registers 165º in center.
