4 large leeks
1 medium onion
1 medium potato
50g butter
850ml veg stock (might not need it all)
275ml milk
salt and pepper

Directions:
Directions:
Trim and chop the leeks quite finely
wash and drain
Finely chop the onion and peel and cube the potato
Melt the butter in the pan, add the leeks, potato and onion
Sweat on a very low heat for 15mins

Add the stock and milk with some seasoning
Bring to the boil then simmer gently for 20 mins
Turn off the heat
Use a hand blender or food processor to blend until the right consistency
Taste and adjust seasoning
Serve and enjoy!
