1 7-3/4 oz. can salmon, drained and flaked
1 c. cooked mashed potatoes
2 tbsp. minced onion
1 tbsp. minced fresh parsley
1 egg, beaten
1/2 c. bread crumbs
1/2 tsp. salt
dash of pepper
1/2 tsp worcestershire sauce
oil for frying

Directions:

Mix all ingredients except bread crumbs and oil. When well blended, measure out about 1/3 c. of mixture and shape into croquette on wax paper. Repeat until salmon mixture is all used. Spread bread crumbs on paper plate or shallow bowl. Dip croquettes in beaten egg and roll in bread crumbs until covered. Allow to dry for 10 minutes to set coating. While croquettes are drying, heat oil to 375 degrees. Fry croquettes, 2 or 3 at a time, in single layer for 3 to 4 minutes until golden brown. Drain on paper towels.
