1 large potato
1 large onion
Bunch of watercress washed
Salt and pepper
4 tablespoons Olive oil

Directions:
Directions:
1. Peel potato and chop into chumks
2. Chop onion
3. Add olive oil to a largish saucepan and fry the onion until soft but not brown.
5. Add the potato, stir well and leave to simmer for 5 minutes
6 .Add 1 pint water, bring to the boil then simmer until the potato is soft.
7. Cool slightly then add the watercress
8. Blend the whole thing until smooth then add seasoning and more water if you want it
thinner.
