1 Onion
1 Aubergine
3 medium courgettes
1 pepper
4 garlic cloves
Olive Oil
salt and pepper
400g chopped tin of tomatoes
Tomato Puree 70g

Directions:
Directions:
1. Chop onion and fry gently in a large pan with about 6 tablesoons of olive oil until soft.
2. Chop pepper, courgettes and aubergine roughly into even pieces then add to pan with crushed garlic
3. Stir really well until everything is coated in the oil (add a bit more oil if it's too dry) then keep the heat low and put a lid on the pan to simmer for 10 minutes.
4. When it's soft, add the tin of tomatoes and a large squirt of tomato puree or indvidual portion. Add a little more water to make the consistency how you want it but it should not be too runny.
5. Add salt and pepper then bring it all to the boil then simmer on a low heat for about 15 minutes or until everything is soft.

The good thing about this dish is that it will last for 3 to 4 days if kept in a fridge. Spoon out the required amount each time and transfer to a smaller pan to reheat.
Some ideas:
1.Add to pasta as a sauce then top with cheese.
2.Add to a jacket potato and top with cheese.
3.A dollop of ratatouille goes well with any rissoles or burgers
