6 potatoes, thinly sliced
1 medium onion, chopped
2 Tbls. Olive oil
Salt, pepper & lemon pepper to taste
1 tsp. Garlic powder
1/2 tsp. Paprika
1 lb chicken pieces (I recommend boneless)
2 lemons, cut in half

Directions:
Directions:
Preheat oven to 425°F. Add potatoes & onions to bottom of pan. Drizzle olive oil & season with salt, pepper & lemon pepper, 1/2 of garlic powder & paprika. Season both sides of chicken with salt, pepper & lemon pepper. Place chicken over potatoes (if skin is on your chicken, place skin side up). Season with remaining garlic powder and paprika. Squeeze lemon juice from lemons over chicken & potatoes & toss the lemon halves on top. Cover & bake 1 hour or until chicken is done through, poatoes & onions are tender & carmelized. Place under broiler for a few minutes to reach desired color.

**I usually do this in a 12 inch dutch oven, but this works beautifully in a casserole dish in the oven.
