2 cups flour
1 tsp baking powder
1 tsp salt
1 tsp apple pie spice (or 3/4 tsp cinnamon + 1/4 tsp nutmeg)
1 1/2 cups unsalted butter, softened (3 sticks)
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
3 cups old fashioned oats
1 1/2 cups of raisins (you can use blond raisins too)

Preheat oven 375 degrees
Line baking sheets with parchment paper.
In a medium bowl combine flour, baking powder, salt and apple pie spice
In another bowl with electric mixer, cream butter and both sugars on high until light and fluffy. Add vanilla and eggs (one a time). Slowly mix to add flour mixture, add oats and raisins
Scoop 1 1/2 tbsp cookie dough and bake 2 inches apart for 13-14 minutes
cool on baking rack before storing
