Ingredients: ¼ cup EVOO ½ red onion 4 cloves garlic, minced 2 tbsp parsley 1 lb ground beef (or ½ ground beef, ½ sausage) 1 (2lb 3oz) Italian diced tomatoes, undrained 2 (6 oz) cans tomato paste 1 tsp dried basil leaves 2 tsp dried oregano 1 tbsp salt ¼ tsp pepper 2 tbsp sugar 1 tbsp EVOO 1 tbsp salt ½ (1 lb) pkg lasagna noodles 1 lb Mozzarella cheese, sliced thin 1 lb Ricotta or Cottage cheese 1 (3 oz) jar grated parmesan

Directions:First make the sauce: Heat EVOO in a large 4 qt pot and sauté onion, garlic and parsley until onion is tender (about 5 minutes). Add meat to skillet and cook until brown. Add rest of sauce ingredients (tomatoes to sugar) and mix well. Bring sauce to a boil, reduce heat and simmer covered for 3 hours, stirring occasionally.
Bring 3 qts of water and the salt to a boil. Add EVOO. Add lasagna noodles (2 or 3 pieces at a time) to the boiling water. Cook noodles uncovered for 15 minutes, gently stirring occasionally. Drain and rinse under hot water. Preheat oven to 350 degrees and grease a 13x9x2” pan.
Assemble lasagna: Spoon 1/3 sauce evenly into bottom of greased pan. On sauce layer 1/3 noodles, Ricotta, Mozzarella and Parmesan cheese. Repeat twice, beginning with sauce and ending with Parmesan cheese. Bake uncovered 45 to 50 minutes or until cheese is melted and the top is browned. Let lasagna stand for 10 to 15 minutes before cutting to make serving easier. |

Notes: Best when assembled the night before and put in the fridge. But first, let lasagna stand for 1 hour at room temperature before putting in the oven.
