1 C. oat or almond milk
1 ripe banana
3/4 C. whole wheat flour
1 tsp. baking powder
1 T. peanut butter
3/4 C. blueberries

Directions:
Directions:
1) Place all ingredients except blueberries into a food processor or blender and process until there are no floury lumps.
2) Light grease frying pan with olive oil and heat.
3) Put 3 or 4 dollops of batter into pan. Sprinkle some blueberries onto each one.
4) Cook on medium heat until bubbles appear on surface, flip and cook other side for a couple of minutes until golden brown and cooked through.
5) Top with maple syrup and additional blueberries, if desired.
