3 eggs
1 cup white sugar
1 cup brown sugar
1/2 cup oil
1/2 cup unsweetened applesauce
1 tsp vanilla
2 cups flour
3 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
2 cups coarsely grated zucchini
1 cup chopped nuts (optional)

Directions:
Directions:
Beat eggs, sugars, oil, applesauce, and vanilla. Sift together the flour and other dry ingredients. Mix the dry ingredients into the egg/sugar mixture. Stir in zucchini and nuts. Pour into 2 greased and floured loaf pans. Bake at 350º for 1 hour or until a toothpick comes out clean.

I got this recipe from my cooking class in 6th grade. It is the best zucchini bread recipe that I have ever made!
