2 large bell peppers halved
1 large Zucchini diced small
3 Green onion diced small
1/4 cup Mushroom diced small
1/4 cup yellow onion diced small
1 large tomato diced small
1 cup heavy cream
6 cloves of garlic
1/4 cup olive oil or avocado oil
1 cup or rice
1 cup parmesan cheese
1 cup of mozzarella
1 tablespoon garlic powder
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon pepper

Directions:
Directions:
Prep: Dice the zucchini, onions and mushrooms and place in a bowl. Go ahead and add the seasoning to the diced veggies. Dice the tomato and set is aside, do not add to the mix.

Place the two halved bell peppers on a cookie sheet and bake for approx. 15 minute at 400.

Using a garlic press, Sauté the the garlic in the oil until brown. Once brown, add half of the cream and cook for approx. 3 min on medium. Now add the veggie mix from the bowl and cook on medium heat for approx. 5 minutes. Now add the rest of the heavy cream and tomatoes. Cook until bubbles stirring frequently, approx. 5 minutes cook time. Now add the rice and mozzarella and cook 2 more minutes. Take out the bell peppers and stuff with the mix. Once stuffed, cover each one with the Parmesan cheese. Place back in the oven and cook at 350 for approx. 45 minutes. Once done, turn on broil to crisp up the parmesan.
