1 english cucumber, peeled, seeded and chopped into chunks
3 medium tomatoes, seeded and chopped into chunks
½ cup onion, chopped
½ green pepper, chopped
2 Tblsp. fresh lemon juice
2 Tblsp. olive oil
1 Tblsp. ground sumac *
1 tsp. aleppo pepper *
1 cup pita chips, crushed
1 cup cubed feta cheese (optional)
grilled chicken (optional)

All of the measurements are approximate. Feel free to add more or less of anything as you see fit. I don’t add any salt but you might want that. Also, there are many variations. Try using different types of vegetables, try adding romaine lettuce, or try adding fresh herbs to the mix – parsley, cilantro, dill, or mint!

Combine cucumbers, tomatoes, onion, and green pepper in medium bowl. In separate smaller bowl, combine lemon juice, olive oil, sumac, and aleppo pepper. Shake or stir vigorously. Pour dressing onto vegetables and mix until coated. Top with feta, chicken, and pita chips just before serving. Enjoy!
