1½ c. all-purpose Flour
½ c. Sugar
½ c. light Brown Sugar
2½ tsp. ground Cinnamon
1 tsp. Baking Soda
½ tsp. Cream of Tartar
½ tsp. Salt

Wet Ingredients:
5 tbsp. Vegetable oil ( or canola)
2 tsp. pure Vanilla extract
1 tsp. Apple Cider Vinegar (or white vinegar)
1 c. Water

Cinnamon Sugar Topping:
1 tbsp. Sugar
1 tsp. ground Cinnamon

Directions:
Preheat oven to 350º. Spray (DO NOT use Crisco) an 8"x8" baking dish with non-stick cooking spray.

Mix dry ingredients (flour, sugar, brown sugar, cinnamon, baking soda, cream of tartar and salt) in bowl until well blended and pour into prepared baking dish.

Next, make 3 depressions in dry ingredients -- 2 small, 1 larger. Add vinegar in one depression, vanilla in the other and vegetable oil in the third larger depression. Pour water over all. Mix well until smooth (I use a fork to mix)

Mix cinnamon & sugar together for topping. Sprinkle over cake.

Bake on middle rack of oven for approximately 35 mins. Check center of cake with toothpick to make sure it comes out clean. Allow to cool.

Top cake with warm caramel sauce and a scoop of vanilla ice cream. Yummy!
