250g of mushrooms
2 large red onions
2 cloves of garlic
1L of chicken or vegetable stock
2 tablespoons of butter
50ml of cream
45ml of whisky

Directions:

Chop and slice your vegetables

In a pan on medium heat, put in the butter and, sauté the mushrooms, onions and garlic until the onions turn transparent. A small pinch of salt can be added to help the mushrooms lose their moisture

Once transparent, pour in the whisky and cover with a lid, and turn off the heat. leave for 5 mins to let the whisky favours.

Now is a good time to sample your whisky. It is always important to sample your ingredients!

Transfer the contents to a pot, add the stock of your choice and simmer for 10 mins

Optionally a slow cooker can be used on a medium-high setting for an hour

Add you cream to finish, blend the soup with a hand blender and serve with some toast
