Garlic Parmesan Sauce
1/2 cup mayonnaise
2 tablespoons grated Parmesan cheese
1 tablespoon half-and-half
1 teaspoon white wine vinegar
1 teaspoon lemon juice
1/4 teaspoon plus 1/8 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley flakes
1/4 teaspoon granulated sugar
1/8 teaspoon salt


5 ounces frozen popcorn chicken (about 6 pieces) or
breaded chicken fingers (2 pieces)
1 ounce (1/4 cup) shredded mozzarella cheese
1 ounce (1/4 cup) shredded Cheddar cheese
1 slice cooked bacon, minced (about 1 tablespoon)
6 to 7 chunks diced tomato (from canned diced tomatoes)

1. Preheat your oven to 400 degrees F.

2. Combine all the ingredients for the garlic Parmesan sauce in a small bowl. Set aside until needed.

3. Cook the chicken on a parchment paper-lined baking sheet in the hot oven for 10 minutes. This is less than the length of time the instructions on the package will tell you, but we need the chicken to be just warmed at this stage since we’ll be cooking it again later. When you take the chicken out of the oven, slice it into bite-size pieces. Popcorn chicken varies in size;
some pieces may not need to be sliced at all and some are so big that they need to be sliced three times. If you use chicken strips, those will need to be sliced 4 to 5 times to make bite-size chunks.

4. Raise the oven temperature to 475 degrees F.

5. Trim a piece of parchment paper down to a 5˝ x 12-inch strip and place it into the center of a baking sheet. Arrange the chunks of chicken on the parchment.

6. Drizzle 2 tablespoons of the sauce over the chicken.

7. Combine the shredded cheeses and sprinkle all of it over the chicken.

8. Sprinkle the bacon bits over the chicken followed by the diced tomato.

9. Bake it for 8 minutes or until the melted cheese begins to darken around the edges.

10. To serve, lift the parchment off the baking sheet and transfer everything, including the parchment, to a serving plate.
