3 large potatoes
1 onion
1 can of mixed beans
2 cloves of garlic
1 can of chopped tomatoes
BBQ sauce (and optional chipotle sauce)
4 Sausages

Directions:
Directions:
Chop your potatoes into chunks and rinse them to remove excess starch
Add the chunks to a pot of salted water and cook until you can easily slip a knife through them.

Cook the sausages and slice into disks
Thinly slice the onion, mince your garlic, grate some cheese & crack open all the cans

In a pan, on medium, fry up the onions with some oil until the onions start going clear, add the garlic and cook from another minute
Add the can of tomatoes and beans to the pan, lower the heat to simmer until thickened
Add the sliced sausage and give a large squirt of BBQ sauce (and chipotle sauce if you want some smokiness)

Once the potatoes are cooked, drain and return to the pot with the heat off. Add a knob of butter and a splash of milk and mash until smooth

Transfer the sausage and tomato mix to an oven proof dish. Top with the mashed potatoes, spread to cover the sausage mixture and sprinkle over the cheese.

Cook on the top shelf of your oven at 200C for 10-15 mins. The top should be golden and bubbling
