French Onion Soup Recipe

100g unsalted block butter
at least 6 large onions, sliced (short slices)
6 cloves of garlic crushed
1 lire of stock (either beef, chicken or vegetable)
optional - 100ml of red or white wine
Salt & Pepper

Baguette - sliced
100g grated cheddar cheese (or parmesan)

Directions:

1. In a large saucepan, melt the butter and cook the onions and garlic gently for approximately 30 minutes, stirring from time to time to prevent sticking.
2. Add salt and pepper.
3. Remove from the heat, stir in the wine (if using) and stock. Return to the heat & bring to the boil, stirring continually.
4. Reduce the heat & simmer for 30 minutes. If too thick add a little water.
5. Place sliced baguette under the grill - grill one side then turn and put grated cheese on top. Melt the cheese under the grill.
6. Serve soups in bowls with cheesy baguette slices on top.

You could rub the toasted baguette slices with garlic before turning and putting on the cheese. You can also add more garlic cloves in the recipes from the start too. Beef stock gives this soup a lovely colour.
