1 slice - Uncooked chopped bacon
1 cup Onion, sliced
1/2 cup Green pepper, chopped
1 - 1lb. can tomatoes
1 - 8oz. tomato sauce
salt and pepper (to taste)
3 cups cooked white rice
2 cups cheddar cheese, grated
paprika (to taste)
6 slices of cooked bacon

Directions:
Directions:
cook bacon, onion and green pepper until tender and bacon is crisp. Drain fat.
Stir in tomatoes, tomato sauce and salt/pepper and simmer uncovered for 5 minutes stirring. Stir in rice, 1 1/2 cups of cheese. Cook until cheese is melted. Pour mixture into a buttered or sprayed 9" baking dish and add paprika and sprinkle remaining cheese on top. Broil until cheese is melted and bubbly. Garnish with the 6 slices of cooked bacon crumbled and serve.
This is a good side dish for Taco night
