3 tsp ginger
1/3 cup orange marmalade
4 garlic cloves
3 tbsp. soy sauce
2 tbs. brown sugar
1/4 tsp. hot sauce
1 tbsp. mustard
1 cup beer
1/4 olive oil
ground pepper

Directions:

Mix ingredients to make sauce.
Keep 1 cup of marinade for later.
Prick holes in roast and marinate for 2 hours basting twice in fridge. Discard marinade.

Add olive oil to roast and black pepper and 1 cup of the marinade (reserved)

cover with foil and bake 1 hour at 400 degree baste at least once
Then drop to 325 degree for another hour and baste at least once
roast should be 140-170 degree
let rest 30 minutes before cutting,
