2 tsp. active dry yeast
6 T. warm milk
2 T. light brown sugar
2 C. flour
1⁄2 tsp. salt
4 oz. (1/2 C.) softened butter
2 tsp. vanilla
1 large egg
1⁄2 cup Belgian pearl sugar

Directions:
Directions:
1) Warm milk to 90º F. (no more than 100º F.). Dissolve yeast in the warm milk with a teaspoon of the sugar.
2) Set aside for 10–15 minutes to activate.
3) Meanwhile, place flour, salt, butter, remaining sugar, vanilla and egg into the bowl of a stand mixer.
4) Using the dough hook, mix until mixture looks crumbly.
5) Add activated yeast mixture and mix just until dough forms a ball and doesn’t stick to the sides of the bowl.
6) Cover with a clean cloth and rest for 10 minutes.
7) Add pearl sugar to the bowl and fold it in, still using the dough hook, or gently knead by hand until evenly distributed.
8) Cover and let the dough rest for 1 hour.
9) Divide dough into 8 parts and roll each into a ball.
10) Preheat waffle iron. Bake until golden brown.

Traditional Belgian Liège Waffles are a sugary sweet treat for anytime of day. This is the most authentic Belgian Liège Waffle recipe that we can make here at home in Canada.

If you cannot find Belgian pearl sugar, you can substitute Turbinado... still really good!
