3/4 C. lukewarm milk
1 package active dry yeast (2 tsp.)
2 T. sugar
2 large eggs
12 T. melted butter
3 1/2 C. flour
1 tsp. kosher salt (or 1/2 tsp. table salt)
2 tsp. vanilla
1 C. Belgian Pearl Sugar

TOPPING SUGGESTIONS:
Sliced berries or bananas, Nutella, warm, melted chocolate, whipped cream, powdered sugar.

Directions:
1) Sprinkle yeast and sugar over warm milk (no more than 100º) in bowl of a stand mixer. Let sit for about 15 minutes until the yeast begins to form a creamy foam.
2) Using a fork or wire whisk, whisk the eggs, melted butter and vanilla into the yeast mixture until evenly blended.
3) Add 3 cups flour and salt to yeast and milk mixture. Mix on low with dough hook until smooth. Add remaining 1/2 cup of flour and mix on low for 2 minutes until a soft dough forms.
4) Cover with a light cloth and let rise in a warm place (80 to 95º F.) until doubled in volume, about 30 minutes.
5) Gently mix the pearl sugar into the dough using a large spoon or by hand.
6) Divide dough into 10 parts (about 3-4 oz. each, the size of a baseball) and form into balls.
7) Preheat waffle iron for about 10 minutes, or according to manufacturer's instructions.
8) Generously grease waffle iron using cooking spray. Cook one piece of dough at a time, placing dough ball in middle of waffle iron, then close and cook until outside is golden and crisp, about 2 minutes. (Watch carefully, as sugar will burn if cooked too long.)
9) Place finished waffles on a wire rack while cooking remaining dough. Or they may be kept in warm oven (225º F.) until ready to serve.
10) Serve warm or cooled with toppings of your choice.

These Liège Waffles are just like those found at Bruges in SLC, Utah! Crisp outside and soft inside, these yeast waffles can easily be made at home with a few simple ingredients. Perfect for either breakfast or dessert.

The dough may be made ahead. Wrap the dough balls in plastic wrap and refrigerate or freeze.
