2 cups sugar
½ cup water
1 stick butter
⅓ cup light corn syrup

Cook over medium high heat, stirring occasionally until caramel is light brown and registers 300° on candy thermometer (about 10 minutes).

Remove from heat and carefully stir in ½ teaspoon baking soda. Stir in 12 oz peanuts.

Scrape the brittle onto a large-rimmed nonstick baking sheet. Oil lightly if it sticks.

Spread into thin, even layer. Sprinkle with salt. Cool and break into large shards. Pack into a tightly covered container.
