2 ½ cups flour
2 tsp baking powder
2 tsp of cinnamon
1 tsp salt
1 cup veg oil
2 cups sugar
4 eggs
1 tsp vanilla
3 cups finely grated carrots
1 cut chopped nuts
1 cup golden raisins

Icing
2 ½ cups icing sugar
½ cup soft marg
4 oz. cream cheese
1 tsp of vanilla

Directions:
Directions:
Heat the oven to 350 degrees. Grease pan.
In a medium bowl, whisk flour, baking powder, salt, and the cinnamon until well blended.
In a separate bowl, whisk the oil, sugars, and vanilla. Whisk in eggs, one at a time, until combined, stir in the carrots, nuts, and raisins.
Bake at 350 degrees for approximately 55-60 min

Icing: Mix ingredients together until smooth consistency, add to top of cake when completely cooled.
