1/4 cup dark brown sugar
1/4 cup light corn syrup
1 tablespoon plus 1/2 teaspoon soy sauce
1/4 teaspoon plus 1/8 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
1/8 teaspoon ground cayenne pepper
Pinch dried basil
2 teaspoons apple cider vinegar
1 1/2 teaspoons bourbon
1/4 teaspoon liquid hickory smoke
Seasoning
1 1/4 teaspoons salt
1 teaspoon paprika
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground coriander
1/8 teaspoon ground cayenne pepper
4 salmon filets
6 ounces (about 4 slices) thick bacon, diced
4 slices bacon (leave whole)
Garnish
Chopped fresh parsley

1. Preheat your grill to high, and spray or wipe the grates with plenty of oil so that the salmon doesn't stick.
2. Make the bourbon glaze by combining the brown sugar, corn syrup, soy sauce, salt, garlic powder, black pepper, crushed
red pepper, cayenne, and basil in a medium saucepan over medium heat. When the mixture begins to bubble turn down the
heat and simmer the sauce for 6 minutes or until thick. Remove it from the heat and stir in the vinegar, bourbon, and liquid
smoke. Cover and set aside.
3. Make the seasoning by combining all the ingredients in a small bowl. Sprinkle the salmon lightly with the seasoning, then
grill it until it’s cooked the way you like it. Be sure your grill is sprayed or wiped with plenty of oil so that the salmon doesn’t
stick.
4. Cook the bacon: Cook the 6 ounces of diced thick bacon until crispy. Cook the other 4 slices whole, until crispy.
5. When the salmon is done, serve each filet by first spooning or brushing the sauce over the top. Stack cooked bacon bits on
top of the salmon, followed by a whole piece of cooked bacon. Sprinkle with parsley and serve.
