Ingredients: Base Ingredients: 4 Cups Old Fashioned Oats 1 ½ Teaspoons ground Cinnamon 1 Teaspoon Baking Powder ½ Teaspoon Salt 2 ⅓ Cup Unsweetened Almond Milk ¼ Cup Coconut or Brown Sugar 2 Teaspoons Vanilla Extract ⅓ Cup Pure Maple Syrup
Add in options for variety: 1 Cup Blueberries ½ Cup Sliced Almonds
or 2 Tsp Lemon Zest 2 Tsp Lemon Juice 2 Tsp Poppy Seeds
or 2 Tsp Orange Zest 2 Tsp Orange Juice 1 Cup Dried Cranberries
or 1 Cup Sweet Potato Puree ½ Cup Grated Carrots ¼ Teaspoon Grated Nutmeg ¼ Teaspoon Ground Cloves

Directions:or 2 Large Mashed Bananas ½ Cup Peanut Butter, smooth or crunchy
or 1 Cup Small diced Apple
or 1 Cup Frozen Raspberries ½ Cup White Chocolate Chips
Preheat oven to 375ºF. Add all ingredients to a large bowl and mix well until everything is combined
Spray a muffin tin with cooking spray and scoop oatmeal mixture in using a large ice cream scoop or a 1/4 measuring cup.
Bake Oatmeal cups for 20 minutes or until cooked through |

Notes: These are a hit with the kids and Alex loves to help me make them. We sometimes add in Chocolate chips to the Banana Peanut Butter ones, to make them extra special! And I like to add in raisins to the Apple ones to give it a little something more.
These can be stored in an airtight container in the fridge for up to 5 days, or in the freezer for up to 3 months.
