Pholourie:
2 cups flour
½ tsp salt
1 tsp sugar
2½ tsp curry powder
1 tsp instant yeast
1 tsp baking powder
1⅓ cups water
Oil for deep frying

Tamarind Sauce:
12 tamarinds, shelled
3 cups water (as needed)
2 tbsp brown sugar
1 pinch of salt
2 cloves garlic, crushed
1 hot pepper
2 leaves of chadon beni(culantro)

Pholourie:
Mix all ingredients together and leave to sit for 30 minutes
Heat oil in frying pan on medium-high heat
When hot, using double spoons, drop batter into oil and fry until brown
Drin on paper towel and serve

Tamarind Sauce:
Mash pepper, garlic and culantro
Add cleaned tamarinds to sauce pan
Add 2 cups water and boil on low for 20 minutes
Add mashed spices to tamarind
Add sugar, mix and leave to cool
